Alpha-Carotin ist, na Beta-Carotin, die häufigste Form von Carotin. Der Unterschied zwischen Alpha- und Beta-Carotin ist die Position des Doppelbindung in jedem Terminal Cyclohexanringe.

Physiologie und Stoffwechsel

Der Körper wandelt Alpha-Carotin in Vitamin A (Retinol) und wird deshalb auch Provitamin A genannt. Alpha-Carotin fungiert als Antioxidans. Eine Studie von 2011 weisen darauf hin, dass höher Blutkonzentrationen von Alpha-Carotin im Körper sind mit einem geringeren Sterberisiko verbunden.[1] Bei Frauen typisch Serumkonzentrationen bei 5,31 µg/dl; bei Männern sind dies 4,22 µg/dl.

Aussehen

Gemüse, das als Alpha-Carotin-Quelle dienen kann, sind Möhren, Brokkoli, Rosenkohl, Spinat, Kürbis, grüne Bohnen und Grüner Salat. Auch in Kiwi die Substanz wird gefunden.
